4. Valli Chisone e Germanasca: le ricette della tradizione -  Cucina, montagna e tradizione

Istituto Comprensivo "C.Gouthier" - Perosa Argentina (TO)  

Il progetto nasce  nell’Ist.Compr. “Gouthier” di Perosa Argentina, nelle suggestive Valli Chisone e Germanasca. L’obiettivo è quello di recuperare il patrimonio gastronomico tipico della zona, contestualizzandolo nei particolari momenti storici e ricercandone, quindi, le origini. E, per non permettere al tempo di disperderlo, si è pensato di pubblicare una guida gastronomica delle Valli che sia fruibile nella lingua francese, in quella inglese e tedesca. D’altra parte l’appuntamento alle olimpiadi del 2006 incoraggia gli abitanti di queste Valli ad approntare tutto ciò che renderà piacevole il soggiorno ai molti turisti che si aspettano per quella occasione. In attesa, nel corso di quest’anno, per esprimere al meglio la volontà di questo recupero della tradizione gastronomica e culturale, sono stati realizzati molteplici  incontri e scambi. Intanto, mentre gli alunni  dell’istituto alberghiero apprendono le lingue, esercitano anche l’attività manuale, preparando due ricette che avremmo molto desiderio di assaggiare.

The objective of this project of the Gouthier School of Perosa Argentina, which lies in the suggestive Chisone and Germanasca valleys, is that of retrieving the gastronomical heritage typical of the area by setting it within the context of particular moments of history and, therefore, searching out its origins.  And, in order that it should not be lost in the course of time, it has been decided to publish a gastronomical guide of these valleys in French, English and German.  Further, the appointment with the Olympic Games in 2006 is an encouragement to the people of these valleys to prepare the ground for this retrieval of the local gastronomical and cultural traditions so that the many tourists who are expected for the Olympics  may have as enjoyable a stay there as possible.  In the course of this year there have to this end been many meetings and exchanges.  In the meantime, while the pupils of the hotel management school continue to learn foreign languages they are also carrying out manual activity by preparing two recipes, which we are very keen to taste.

Die Heimat des Projekts liegt in den malerischen Tälern von Chisone und Germanasca. Ziel des Projekts ist die Bewahrung der typischen gastronomischen Traditionen dieser Region - auf dem Hintergrund von Herkunft und Geschichte. Um zu vermeiden, dass diese Traditionen verloren gehen, wurde ein gastronomischer Führer in drei Sprachen - Französisch, Englisch und Deutsch - herausgegeben. Hierbei spielte der Gedanken an die Winterolympiade von 2006 eine Rolle, für die die Einwohner dieser Gegend alles tun, damit sich die zahlreichen zu erwartenden Zuschauer wohl fühlen. Inzwischen finden im Laufe dieses Jahres mehrere Initiativen von Kulturaustausch statt, um die gastronomische Tradition zu bewahren. In der Zwischenzeit probieren wir gern die köstlichen Gerichte, die die Schüler der Hotelfachschule neben ihrem Fremdsprachenerwerb zubereitet haben.  

Le projet naît à l’Etablissement scolaire “Gouthier” de Perosa Argentina, dans les pittoresques Vallées Ghisone et Germanasca. L’objectif est de retrouver le patrimoine gastronomique typique de la région, en le situant dans son contexte historique précis et en en cherchant donc les origines. Et, pour ne pas que ce patrimoine disparaisse avec le temps, l’idée est née de publier un guide gastronomique de ces Vallées, dont on puisse profiter en français, en anglais, et en allemand . D’autre part, le rendez-vous olympique de 2006 pousse les habitants de ces Vallées à mettre en place tout ce qui pourra rendre agréable le séjour des nombreux touristes attendus pour l’occasion. En attendant, au cours de cette année, de multiples rencontres et échanges ont été  réalisés, pour exprimer au mieux cette volonté de retrouver notre tradition gastronomique et culturelle. Pendant ce temps, tandis que les élèves de l’école hôtelière apprennent les langues, ils s’entraînent aussi aux “travaux manuels”, en préparant deux recettes, qu’il nous tarde de goûter.  

El proyecto nace en el Is. Compr. “Gouthier” de Perosa Argentina, en los sugestivos valles Chisone y Germanasca. Su objetivo es recuperar el patrimonio gastronómico típico de la zona, contextualizándolo en los particulares momentos históricos y buscando, así pues, sus orígenes. Y, para no permitir que el tiempo lo disuelva, se ha pensado en publicar una guía gastronómica de los Valles que se pueda utilizar en lengua francesa, inglesa y alemana. Por otra parte la cita con las Olimpiadas del 2006 anima a los habitantes de estos Valles a preparar todo lo que haga agradable la estancia  a la multitud de turistas que se esperan para esa ocasión. Mientras, a lo largo de este año, para expresar mejor la voluntad de esta recuperación de la tradición gastronómica y cultural, se han realizado múltiples encuentros e intercambios. Por el momento, mientras los alumnos del Instituto de Hostelería aprenden lenguas, ejercitan también la actividad manual preparando dos recetas que tendríamos deseos de probar.
